A Labor of Love in Chablis

In 1990 a young couple decided to take over two hectares of family vineyards. After a bumpy start, four years later, in 1994 they were able to bottle their first wine. Since their humble beginnings, Isabelle and Denis Pommier have been committed to producing incredibly honest wines, wines that are a true reflection of the beautiful terroirs of Chablis.

Time has brought change to their Domaine. The initial two hectares are now 16, 14 of them devoted to chardonnay and two to Pinot Noir; what started as sustainable farming is now in the process of organic conversion and a single bottling is now seven cuvees, three of them Premier Cru. A constant factor through the years has been the serious work in the vineyard, with the goal of getting healthier grapes to make richer wines, more authentic and with a greater aromatic purity.

The practices in the cellar match perfectly what they do in the vineyard: no chemicals or synthetic additives and only the yeast indigenous to the grape; aging in tank or barrel, depending of the cuvee, for at least 18 months to enhance the stability of the wines.

The hamlet of Poinchy, where the cellar and most of their vineyards are tend to produce wines that are a bit more generous than the average, but all the Pommier wines have the mineral core that makes them unmistakably Chablis.

The loving care the Pommiers put in their vineyards and wines has been rewarded by the accolades from the press, international quality awards and the presence of the wines in the lists of the most important restaurants both in France and the rest of Europe.

-Petit Chablis: Floral and airy, a perfect aperitif with a refreshing finish. $24

-Chablis: 50% from Kimmeridgean soils, aged in tank, 6 months on the lies, bright and elegant.$27

-Chablis Croix aux Moines: All from Kimmeridgean soils, 50% fermented in barrel, aged on the lies for 12 months, a wine of great complexity and pronounced mineral character. $34

-Chablis 1er. Cru Troesmes : Troesmes is one of the parcels of the 1er. Cru Beauroy. 50% fermented in wood, 18 months of aging on the lies. This cuvee is a great expression of terroir and has incredible ageing potential. $40.

-Chablis 1er. Cru Cote de Lechet: This wine comes from a blend of Kimmeridgean and limestone soils, aged on the lees for 18 months. Expressive and charming. $42

-Chablis 1er. Cru Fourchaume: Fermented in tank and aged on the lies for 12 months, this cuvee is incredibly pure and subtle, perfect companion for oysters and fine shellfish.$44
